Mediterranean Pizza

Made with store-bought dough, this easy mediterranean pizza is topped with sun dried tomatoes, roasted red peppers, olives, artichokes and feta and has a sesame seed crust.

Ingredients

  • 1 tablespoon olive oil plus more for brushing crust
  • 1 pound store-bought refrigerated pizza dough or homemade dough, at room temperature
  • 1 cup pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 garlic clove, thinly sliced
  • 1/2 cup baby spinach
  • 1/2 cup halved pitted kalamata olives and castelvetrano olives
  • 1/2 cup quartered sun-dried tomatoes and roughly chopped roasted red peppers
  • 1/2 cup quartered marinated artichoke hearts
  • 1/4 small red onion, thinly sliced
  • 1/2 cup crumbled feta
  • 2 tablespoons sesame seeds

Instructions

  • Preheat the oven to 450 degrees F. Grease a sheet pan with 1 tablespoon olive oil. You can line the pan with parchment paper if you want. 
  • Stretch and shape the dough into a rough rectangle or oval, about 9-inches by 12-inches. (If the dough is sticky, you can dust it with flour to make it easier to work with.)
  • Spread the pizza sauce across the dough, leaving a 1/2-inch border at the edges.
  • Sprinkle the mozzarella cheese and sliced garlic on the pizza.
  • Top with baby spinach, olives, sun-dried tomatoes, roasted red peppers, artichokes and red onions. 
  • Scatter the feta over the vegetables.
  • Brush the crust with olive oil and sprinkle with sesame seeds.
  • Bake for 12-14 minutes until the pizza crust puffs up and is browned and crisp.

Notes

If you don’t want to use refrigerated pizza dough, you can use store-bought pizza crust. Just follow the cooking instructions on the package.
You can bake the pizza on a preheated pizza stone instead of a sheet pan.
Adjust the amounts of olives, red peppers, tomatoes and artichokes to suit your taste. You just need about 1-1/2 cups total.
Store leftover pizza in the refrigerator up to 5 days. Wrap it or put it in an airtight container. Eat it cold or warm it on a baking sheet in 400-degree F oven for 7-9 minutes.
You can freeze the pizza wrapped tightly up to 1 month. Warm it for 13-15 minutes at 400 degrees F. You do not need to thaw it before putting it in the oven.
