Sweet Potatoes

Parsley

Preheat the oven to 400 degrees F. Grease a sheet pan with non-stick cooking spray.

Use a box grater to shred the potatoes. Gently squeeze them with a towel to remove excess water.

Put the sweet potatoes, cumin, chili powder, garlic powder, onion powder, salt, pepper, flour and scallions in a large bowl.

Stir the ingredients until they are well combined.

Then stir the lightly beaten egg into the sweet potato mixture.

Shape the fritter batter into patties by the 1/4-cup-full. Arrange them on the pan 2-3 inches apart.

Bake the fritters until they are browned on both sides, about 25-30 minutes. Flip them over halfway through baking.

Sprinkle with chopped parsley. Serve the fritters with Greek yogurt.
