Parmesan

Sun Dried Tomatoes

Penne Pasta

Arugula

Garlic

Parsley

Salt & Pepper Red Pepper Flakes

Reserve 1/2 cup pasta water before draining.

Cook the pasta according to package instructions until al dente.

Heat the olive oil in a large skillet over medium heat.

Sauté the garlic, red pepper flakes, salt and pepper until fragrant, about 30 seconds.

Add the sun dried tomatoes and sauté for 2 minutes.

Pour in the reserved pasta cooking water letting it bubble for a couple minutes, stirring to coat the pasta.

Stir the cooked pasta into the tomatoes.

Stir in the Parmesan cheese.

Finally, stir in the arugula.
