Heat the olive oil in a large skillet over medium heat. Sauté the butternut squash until it becomes tender, stirring frequently, about 10-12 minutes.

Heat the olive oil in a large skillet over medium heat. Sauté the butternut squash until it becomes tender, stirring frequently, about 10-12 minutes.

Add the chopped onions. Continue sautéing for 4-5 minutes until the onions are soft and translucent.

Stir in the minced garlic, dried thyme, salt and pepper. Give the squash and onions 1 minute to become fragrant.

Add the kale. Sauté for 2-3 minutes until the leaves soften. Stir in the toasted walnuts and parsley.
