Tomato Peach  Burrata Salad

Arugula

White Balsamic Vinegar

Olive Oil

Salt & Pepper

Chives

Tomatoes

Peaches

Burrata

Pesto

Whisk together the pesto, olive oil, vinegar, salt and pepper in a bowl big enough for the entire salad.

Make the vinaigrette.

Stir the tomatoes and peaches into the vinaigrette. Let them sit at room temperature for 30 minutes.

Marinate the salad.

Sprinkle on the arugula and chives. You can split the burrata in half and drizzle it with the vinaigrette.

Arrange the peaches and tomatoes on a serving dish.

Or you can tear the burrata into pieces and scatter them over the entire salad.
