Baby Spinach

Water

Combine the barley and water in a pot. Bring them to a boil, reduce heat and simmer until the grains are tender but chewy, about 12 minutes. 

Warm the oil over medium high heat in a large skillet. Sauté the mushrooms for 5 minutes until they start to brown.

Add the garlic, salt and pepper to the mushrooms. Sauté for a few more minutes until the mushrooms are caramelized.

Stir the barley and spinach into the sautéed mushrooms. After the greens wilt slightly, stir in the parsley and chives.
