How To Make Stewed Tomatoes

Roma Tomatoes or Plum Tomatoes

Oregano Rosemary Salt & Pepper Sugar

Bell Peppers

Olive Oil

Garlic

Onions

To peel the tomatoes, score the bottoms with an X. Simmer in boiling water for 1 minute. Then put them in a bowl of cold water.  Peel and roughly chop the tomatoes.

Heat the olive oil in a large skillet or sauté pan over medium high heat.

Sauté the chopped onions until they start to become soft and translucent, about 4 minutes.

Add the bell peppers and continue cooking for 2 minutes.

Stir in the garlic, oregano, rosemary, salt, pepper and sugar.

Pour in the tomatoes and stir them into the onions and peppers.

Simmer for 20-25 minutes until the tomatoes thicken, but you can still see some juice in the pan.
