Easy Grilled  Sweet Potatoes

Tomatoes

Cumin Paprika Onion & Garlic Powder Salt & Pepper

Olive Oil

Sweet Potatoes

Onions

Cilantro

Jalapeños

Preheat a gas or charcoal grill on medium high heat. Cut the potatoes lengthwise. Then slice them 1/4-inch thick.

Toss the potatoes with olive oil, cumin, paprika, onion powder, garlic powder, salt and pepper.

Grill the potatoes until they have grill marks and are tender in the middle, about 6-7 minutes per side.

To make the pico de gallo, combine the tomatoes, onions, cilantro, jalapeños, lime juice, salt and pepper in a bowl.

Arrange the grilled sweet potatoes on a plate and top with pico de gallo and chopped cilantro. You can also serve them with pesto,  store-bought salsa, or ketchup instead.
