Grilled Tofu  Shawarma

Salt Pepper

Zucchini

Olive Oil

Yellow Squash

Tahini

Tofu

Turmeric Cumin Paprika Cinnamon Ginger

Garlic

Lemon

Bell Peppers

Parsley

Wrap the tofu in paper towels and place a heavy pot or cutting board on top of it. Let it sit for 15 minutes.  Then cut it into 1 1/2-inch x 1-inch pieces.

To marinate the tofu, combine the turmeric, cumin, paprika, cinnamon, ginger, coriander, salt, pepper, lemon juice and oil in a large bowl.  Then stir in the tofu.

Thread the marinated tofu onto skewers. (If you use wooden skewers, soak them in water first.)

Stir the zucchini, squash and peppers in the bowl with the remaining tofu marinade. There should be enough leftover to lightly season the veggies.

Thread the vegetables onto skewers.

Grill the tofu for 2 minutes per side until it has grill marks.

Grill the vegetables for 2 minutes per side until it has grill marks.

To make the sauce, stir the tahini, garlic, parsley, lemon juice, salt and water in a small bowl. It should be a thick but pourable consistency.
