Vegan Apple Cinnamon Muffins

Vanilla Extract

All-Purpose Flour

Vegetable Oil

Sugar

Oat Milk

Granny Smith Apples

Apple Cider Vinegar

Cinnamon Baking Powder Salt

Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with paper liners. Combine the cinnamon, baking powder, salt and sugar in a large bowl.

In a medium bowl, whisk the vegetable oil, oat milk, apple cider vinegar and vanilla extract.

Pour the wet ingredients into the dry ingredients.

Fold the wet and dry ingredients together until you only can see a little of the flour mixture in the batter. Then gently stir in the apples. Do not over mix.

Stir the cinnamon and sugar in a small bowl. You will need this to top the muffins before you bake them in the oven.

Pour the batter into the muffin cups in the pan.

Sprinkle with cinnamon sugar.

Bake for 25-30 minutes until the muffins are golden brown and cracked on top. When you press down on them, they should spring back.
