Pumpkin Seeds

Salt & Pepper

Sherry Vinegar

Olive Oil

Parsley

Garlic

Toss the sweet potatoes with olive oil, salt and pepper.

Roast the sweet potatoes until they are tender and golden brown at the edges.

Combine the romaine, kale, apples, pears, pumpkin seeds, blue cheese, scallions, parsley and sweet potatoes.

Whisk together the garlic, sherry vinegar, olive oil, salt and pepper.

Stir the vinaigrette into the salad.
