Preheat the oven to 400 degrees F with 2 sheet pans on the racks. Trim the brussels sprouts and thinly slice them lengthwise.

Stir the brussels sprouts with olive oil, fresh lemon juice, salt and pepper. They should be evenly coated in the mixture.

Spread the brussels sprouts across both preheated sheet pans. They will sizzle when they make contact with the hot metal.

Roast the brussels sprouts until they are browned and crisp at the edges, flipping halfway through roasting. This will take 15-20 minutes.
