Balsamic Zucchini Tomato Bake

Olive Oil

Oregano Red Pepper  Flakes Salt & Pepper

Cherry Tomatoes

Parmesan

Zucchini & Yellow Squash

Parsley

Balsamic Vinegar

Garlic

Preheat the oven to 350 degrees F. In a large bowl, whisk together the olive oil, balsamic vinegar, garlic, oregano, red pepper flakes, salt and black pepper.

Stir the zucchini, yellow squash and tomatoes into the balsamic marinade. Make sure they are fully coated in the mixture.

Transfer the vegetables to a square baking dish. Sprinkle them with Parmesan cheese.

Bake for 30-35 minutes until the zucchini and yellow squash are tender and the tomatoes are wrinkled.
