Preheat the oven to 400 degrees F with a sheet pan inside. Stir together the garlic powder, onion powder, red pepper flakes, salt, pepper and olive oil.

Toss the zucchini slices with the olive oil mixture.

Carefully arrange the zucchini on the preheated pan in a single layer.  Sprinkle with Parmesan cheese.

Roast the zucchini until it is golden brown, about 30-35 minutes. Top with chopped parsley before serving.
