Southwest  Pasta Salad

Olive Oil

Bell Peppers

Cumin Salt & Pepper

Black Beans

Fusilli Pasta

Tomatoes

Corn

Garlic

Cilantro

Avocado

Limes

Scallions

Radishes

Cook the pasta until al dente in salted boiling water according to package instructions. Rinse with cold water.

Rub the corn with olive oil and grill over high heat until lightly charred all over.

Slice the kernels off the grilled ears of corn.

Combine the avocado, garlic, lime juice, cilantro, cumin, salt, pepper and olive oil in a food processor.

Puree the dressing ingredients until they are very smooth.

Stir the dressing into the cooked pasta. Make sure it is coating all the noodles.

Then stir the corn, black beans, tomatoes, radishes, scallions and cilantro into the pasta.
