Jicama Salad with Grapefruit & Cabbage

Shredded Carrots

Olive Oil

Salt  Pepper

Cilantro

Avocado

White Wine Vinegar

Jicama

Grapefruit

Scallions

Black Beans

Garlic

Mustard

Pepitas

Shredded Cabbage

Slice off the top and bottom of the grapefruit. Cut off the peel and pith following the curve of the fruit.

Cut out the fruit segments between the membranes catching the juice in a bowl.

To make the vinaigrette, whisk the garlic, 2 tablespoons grapefruit juice, mustard, vinegar, olive oil, salt and pepper in a small bowl.

In a large bowl, combine the grapefruit, jicama, cabbage, carrots, avocados, black beans, scallions, cilantro and pepitas.

Drizzle the vinaigrette into the salad, tossing to combine.
