Sauté the onions until they start to turn soft, about 5-7 minutes.

Preheat the oven to 350 degrees F.

Add the garlic, cumin, turmeric, cinnamon, salt and pepper and continue cooking for 2-3 minutes.

Place the lid on the pot. Bake in the oven for until the vegetables are tender, about 30 minutes.

Add the root vegetables, tomatoes and vegetable broth and bring to a simmer.

Simmer on the stove over medium heat for 5-10 minutes until the stew has thickened slightly.

Stir in the chickpeas, olives, lemon juice and apricots.

Serve the tagine and couscous.

Make the couscous on the stove. Stir in the parsley, almonds, salt & pepper.
